If you want to be safe, follow a recipe that's approved for water bath in quarts. Tomatoes are almost always fine. If you add peppers, corn, onion, those all have lower acid concentration, you could get into botulism territory. most recipes will add lemon juice or vinegar to keep you safe acid wise.
