Planted way too many zucchini plants this year and have them just about running out my ears. No telling how many I have palmed of on neighbors and relatives. Found a recipe for the Zucchini, Carrot, oat Cookies and have started making them. Surprisingly, they are great. I am now grating the zucchinis and freezing them for later. My wife is a diabetic so the next batch will be made with Splenda. She ate one with the sugar and said she wants some for herself. Since her heart attack in June, I have taken over most of the cooking and that sure leaves a lot to be desired.
