Kind of like plantains.
They can be eaten cooked green and will be starchy like a potato. The riper they get when cooked the sweeter they will be. For the candied taste in some dishes they will be cooked fully ripened.
But yep, they do have carbs.
Carbs are not bad. Just too many too often are bad. Or for people like me that have reduced metabolic function because of insulin resistance they are more of a problem than someone metabolically healthy without insulin resistance.
