My mother found this recipe in a magazine last year and shared it with me.

With recent temps being quite warm, I have really been enjoying making this recipe.

I have a mint plant and enjoy adding more mint leaves than the recipe calls for; but otherwise, I stay fairly true to the recipe.

Thought some of y’all might enjoy it as well!

Cucumber Lime Drink

1 Cucumber (peeled)
5 Mint Leaves
1/2 Jalapeño Pepper (seeds removed) (optional)
4 c. Cold Water
6 Tbsp. Lime Juice
1/3 c. Granulated Sugar

Use a blender to combine the cucumber, mint leaves, jalapeño (if using), and water. When thoroughly blended, pour through a fine mesh strainer. Return the strained liquid to the blender, add the lime juice and sugar, and blend. Best served cold with or without ice.
