I smoked 7 of them last Sunday for my wife who served them at church Wednesday evening. Did 4 on my home made old fashion stick burner and 3 on a Traeger pellet grill. Avg weight on them was about 7 lbs but 2 were only 5 and 1 of them was 11 lbs. The 11 lbs one took 12 hrs on my stick burner at 225. The lightest one took about 7 hrs on the stick burner. I moved the 3 that were on the pellet grill onto my stick burner and finished them on it. They were running about 2 hrs behind vs the stick burner. They were al delicious and shredded real easy. I had the temp on the Traeger set at 225 for a long time but kept seeing it drop to 190 in between cycles. I turned it up to 250 after about 5 hrs or so. I do believe the thermometer on my old smoker is reading a little cooler the actual temp.
