For what it is worth, I started a roughly 11 lbs. butt this moringing at 8 am. Right now I’m at 160 deg, been in the stall for an hour or so. I’m holding right around 225 for cook temp on a Masterbuild 560. I expect I will be at least until 8 pm before I’m done.
I’ve done a bunch of butts in the past but used a side box smoker that I had to manually feed Charcol. Could never keep the temp low enough, usually ended up at 6 hrs. Makes for a tough butt that doesn’t pull well.
I would budget at least 12 hrs for your cook. If you get done early, wrapping the butt in a towel and putting in a cooler will hold the temp for a couple of hours.
