I think the coconut flour soaks up some of the oil (fat) coming out of the cheese as it is being heated. Had some last night that wife added cottage cheese. It changes the texture and makes them a little heavier. Tasted good. She also used a Dash griddle instead of the waffle maker. I think I like the waffle maker better with the waffle indention marks. Holds butter better. :-) John
