Took a knife skills course back in February and learned quite a bit how to hold and use a knife. Don’t forget about proper care of these investments which should last multiple lifetimes. You might be able to find something similar on YouTube or somewhere.
Course was nice because we were able to try ~5 different brands and find preferences for fit and balance.
To add: you do not need a full set of knives. A 5-7” santoku or chefs knife will do 95% of what you need a knife to do in the kitchen.
