Some redroot pigweed was growing around the milking parlor on a farm. I was visiting with the owner nearby and one of the hispanic milkers quietly asked if he could pick it. When the owner said yes, the 50's aged milker was happy as a kid in a candy store.
Pigweed is in the amaranth family and amaranth has been used as a food grain for thousands of year. The natives in Mexico were eating amaranth when the Spanish conquistadors arrived.
