The only difference is what it's used for.
Class I is fluid milk
Class II is soft products (yogurt, ice cream, etc.)
Class III is cheese
Class IV is butter and nonfat dry milk

There are different formulas for calculating the price of each, class III is the only one that pays for protein separately, and protein is very expensive right now because cheese is very expensive.
