Just found out the fish needs to be frozen a week at -4 degrees to be safe to eat without heated cooking. That takes two stage refrigeration to get that cold and needs to be thermometer checked to make sure it stays at -4.
So I guess it will be no more bluegill ceviche for us. :-(
