Northern IN | It’s sometimes hard to put a time on cooking with a smoker because there can be variations in meat and cooking conditions that effect how long it takes. This is more noticeable when cooking at low temps. It’s possible your chicken breasts are larger than what the author of the recipe used which would account for some difference. What is your target meat temperature? Are you using an instant read thermometer to check it?
I have a different make of pellet smoker but I find that the temp control works better if I wipe the soot off of the probe every 2 or 3 uses.
If you’re into research on this sort of thing there is a lot of good information at amazingribs.com explaining techniques and the science behind them. | |
