n.c.iowa | My wife’s recipe is similar, I like my potatoes in smaller cubes than she does, like 1/4”x1/4” to 5/16”x 5/16” so I do the potatoe cutting. She slices the eggs into about 1/4” slices.
she adds in the miracle whip to the egg yolks until they get creamy, then adds the yellow mustard until it’s mustardy enough( don't shoot me these are the technical terms she’s giving me. some salt to taste, a touch of pepper.
makes a kinda “neutral” potatoe salad that everybody at least tolerates. I actually like mine with more kick I’ll add some more pepper, and smoked paprika.
occasionally when it’s available I’ll add some pickle juice to mine to kick it up a notch. |
