Need to find out what kinda cuts the customers from that butcher are getting. I’ve found out over the years the butchers’ sometimes kinda lead the not so educated in the meat world into their way of doing things. Alotta times that’ll account for some differences.

but that kinda difference is quite abit, more than can be attributed to a closer trim. 30 lbs of tallow would be ALOT.

The difference I’m guessing that you are seeing is probably closer to 80-90lbs?
