Lake Superior is always a nice area, generally cool with the Lake breeze. Better google ships and museums to see what is and what isn't open. Highway 35 along the river is a great scenic route up the Mississippi. If you take that route be sure to stop in the little village of Nelson up in Buffalo County for an ice cream cone. You can't miss it, lots of people always lined up there to get one! Eagle museum/observatory across the River in Wabasha is interesting as is the Lark Toy Museum with a huge carousel just down the road near Kellog MN.
