There are tons of great recipes out there. I think a lot of them end up being over complicated though. I like to keep it simple, I use this on pork and chicken.
2 parts paprika
1 part kosher salt
1 part sugar
1/2 part black pepper
Little bit of cayenne
Spread the meat with a coat of yellow mustard prior to applying the rub.
I also recommend letting the meat sit with the rub on it at least a couple hours to overnight prior to cooking.
