I have experience with the style that has the tank around the casing and pitless adapter, they work good. The controls are above ground and there's only air in them, of course they'll be buried in snow when you need to find out what's wrong.

I don't think I'd want a stainless steel tank inside a well casing, too much galvanic corrosion potential.

Another option besides a separate underground pressure tank or the style around the casing, would be an insulated above ground well house. People foam whole pole sheds these days, it doesn't take much to insulate a small room with 4" of foam on the inside, down below the frost line and out a few feet for good measure. The key to keeping it above freezing is to expose it as much to the subsurface temp and as little to the outside temp. If you're talking lots of water use, then the water will keep it warm enough. If you're talking 20 cows then you'll want a pit for heat transfer. This may not work where you're at, where's that?
