Subject: turkey tenderloins

Pittsburg, Kansas

If you have never had grilled turkey tenderloins they are entirely different than roasted turkey. They eat more like a pork loin or something like that.

Grill them till about the diameter of your little finger is still not quite done in the middle of the tenderloin. Then let them rest. The final cooking of the middle will happen from the residual heat in the meat. Do not over cook or they become tough.

Great eating. Not always easy to find turkey tenderloins though. Used to be a guy in the area that specialized in getting fresh turkey tenderloins from a local turkey processing facility and feed big gatherings like farm meetings and such. Never any complaints (other than from beef or pork producers for not having beef or pork - but they gobbled them down just the same). Wife has done them a number of times for gatherings but has not done any for a long time now. Maybe time to start again.
