North Central Texas
About 4000 carcasses that were slaughtered last week in the US could have e coli in the trim. Close to 6000 could have salmonella. One calf out of every hundred you sell as freezer beef has a chance to sicken someone who under cooks it. Won't be their fault, it will be yours. Better get a bigger hat if you think it doesn't happen here.
