John Burns, did you post this dressing recipe here on NAT?
I don't remember where I found it, or maybe I found something similar and gf spruced it up.
Anyway...first, we start with a double batch of keto mayo. This is the mayo recipe and we use with both avocado and olive oil in the same batch: https://ketosummit.com/keto-mayo-recipe/

Then add to the double batch of mayo: 1/2 onion (chopped), chopped leaves from 6 sprigs of mint, 2 T sweet relish, 1.5 T yellow mustard, salt. Adjust to taste, which I cannot do but gf can.

Lasts at least a week in the frig.
