We cook these several times a year for large gatherings. Keep them nice and thin.

The trick for us is to soak them for an hour at room temperature in Kikkoman soy sauce. Don't use some cheaper brand, don't do it in the fridge, don't do it shorter, or much longer.

Then flash grill them on a hot grill, and immediately put them in a small well insulated beer cooler to rest for a bit and resoak up.
