one of my favorite cookie recipes is on the bottom of the Quaker oats lid. It's for Oatmeal raisin-- where it says add raisins, I add chocolate chips (and cut the cinnamon just a bit).
Uncooked oatmeal helps to thicken up most cookie recipes.
