I don't have a good idea about amount. It's been a very long time since I kept a sourdough starter - it was mostly in Alaska in the early to mid 70s. All I remember is that adding soda gives lots of bubbles and instant rise - but kills the sour taste. It was the taste that made me keep the starter.

As I remember, the soda works instantly, so maybe start with a little bit and add as needed to get the right amount of bubbles.
