The only way I know of to get fast rise with sourdough is to add soda to it. Trouble is, it kills the sour taste that I loved so much. I guess lots of people like it, however, as it makes bread or pancakes more like regular ones - more "fluffy." Putting soda in is instant bubbles - again - as I remember.

Just using the normal rise with the sourdough for bread can take anywhere from an hour or two to several hours, as I remember. Depends on how active the starter is. The more sour, the less active.
