Mazon, IL | This is what I wound up doing. Wasn’t bad. Cubed the liver then gave it a light browning with garlic, salt, and pepper. Added a can of diced tomatoes, 2 stalks of sliced celery, a couple tablespoons of vinegar, and spinach. Simmered for about 10 minutes and served over noodles with Parmesan cheese.
