I was looking for recipes a few weeks ago and didn't have much luck. Everything was recipes which included chicken sausage. Try googling "making chicken sausage". There are several recipes. It's just hard for me to imagine sausages made from chicken but if you look at wieners or breakfast sausages in the store quite often you will see chicken or turkey as ingredients. It's hard to replace pork for sausage because of the fat so if you are using skin-on chicken it might be ok. When you did grind I would think it would have to be almost frozen to get a good grind, otherwise it might smear on the grinder plate and knife. It seems chicken wouldn't grind very coarse because of it's fine texture raw. I don't know, maybe one needs to add some pork fat to it. All you can do is try. Please let us know if you do attempt it.
