Subject: low carb muffins

Someone ask about these over on Cafe but since most of the diet and low carb stuff is over here on KT thought I would post it here too in case someone wanted the info.

They are muffins. Make them in a cupcake or muffin pan.

They are similar to chaffles in taste but much more airy and light. Good cut in two and slathered with real butter.

Wife adapted it from another recipe. Similar to "keto french toast egg puffs" but she took out the sugar.

8 large eggs

1 8oz cream cheese softened

two Tablespoons heavy whipping cream

1/4 cup coconut flour

1 teaspoon baking powder

half teaspoon salt

Combine ingredients in a blender until well mixed into a liquid. Pour into an oiled muffin tin 3/4 full or thereabouts. Bake at 350 for 25 minutes.

Makes 12. They are good warm or cold.

Let rest 5 minutes. Good for up to a week. Can reheat in microwave or oven.

We alternate between them and chaffles for a bread replacement.
