Subject: RE: Bluegill salad

Pittsburg, Kansas

We used to bread everything before going keto.

Now we do it several different ways. Sometimes sauteed in butter. Sometimes in the air fryer with crushed pork rinds and egg for a coating. Sometimes baked with the pork rind coating. Sometimes BBQ seasoning (without sugar). Numerous ways.

Actually I like beef and pork the best, but we eat quite a bit of fish and enjoy it too.

Had brisket tonight. Cooked it in the Instant Pot. Was good.  I think some of the restaurants are not buying the big briskets so our grocery store had huge whole ones for under $6 a pound. Lot of fat on them. Wife cut them up in chunks and put part in the freezer.
