Check out Andreas Viestad and the New Scandinavian Cook show produced in Norway and shown on PBS TV channels. He is always cooking with a lot of fish including sardines. I saw him make a "sardine pie" on one show and he did not used canned sardines. Some of his recipes are a little weird. I am sure he has a cookbook to sell too.
