Texas | Three Ingredient Pimento Cheese
16 oz. Colby Jack Cheese
2 c. Mayonnaise
8 oz. Diced Pimentos (undrained)
Grate the Colby Jack cheese (I prefer the texture of home grating a block of cheese over purchasing shredded cheese for this recipe). Stir the grated cheese with the mayonnaise and diced pimentos until thoroughly mixed. That’s it.
This recipe is good for sandwiches or as dip for vegetables or apple slices.
