A lot is going to depend on what you are doing with the oil. Frying oils need a high smoke point and taste is not major concern. But in your salad or mayonaise you going to be more concerned about taste. Saturated and unsaturated fat is another issue that a lot of folks are concerned about too. Omega 3 and 6 levels is another issue that get discussed a lot.
We use a lot of olive oil, but for frying at higher temperatures I use canola oil. I also use butter for some situations. I think peanut oil has the highest smoke point, but it is expensive.
But are not on a keto diet.
