Wife uses coconut flour if she wants a dryer more bread like texture. However most of the time it is just eggs and shredded cheese. Two eggs and a cup of shredded cheese. That is it. She just mixes it up in a bowl and spoons it into the waffle maker. Mozerella if you want one that does not have much taste or something like a Mexican blend or sharp cheddar if a person wants more of a cheese taste. Can also add spices like garlic if desired. Kind of depends on what you are using them for. For sandwiches where you want what is inside the sandwich to shine, use a mild cheese.

We vary it.

I have heard another method if a person wants a more crispy texture is to layer the shredded cheese in the waffle maker, add the mixed up egg, then another layer of cheese on top. Bake. This puts the cheese directly against the cooking surface (or use a slice of cheese) and makes a more "fried cheese" type crispy surface. We have not tried that, just read about it. I know you can either cook them longer for more crispy or less for softer texture, just like baking waffles or cooking eggs to different doneness.

Wife says the bigger size shredded cheese makes it more crispy than the finer shredded cheese. The bigger shredded cheese is what is in the picture. Try just dropping the coconut flour out.
