This recipe has been a favorite of mine for years.

Hominy Stir-Fry

1 large carrot (peeled and sliced)
1 green bell pepper (sliced or chopped)
1 zucchini (sliced)
1 16oz. can yellow hominy (drained)
3 green onions (sliced)
2 Tbsp. oil (I use canola or olive)
1/2 tsp. lemon pepper
1 Tbsp. Worcestershire sauce

Heat oil in a large skillet. Add the carrot and let it start to soften. Then add the bell pepper and zucchini. Let those soften slightly then add the hominy and lemon pepper. Stir those together, then add the green onions and Worcestershier sauce. Stir until vegetables are crisp tender.

This recipe is supposed to be served hot, but I also like it cold.
