coast of Maine | I have tried making these cheese crisps trying to short cut john B,s chaffels.I take thinly shaved sharp cheese and drop into a hot pan and let melt ,just about time they start to smoke I scrape and flip ,when cooled these are just about texture of a chewy taco shell.I eat them with eggs in the am but will eventually take with my sardines if i dont eat them before lunch.The smaller the fish the less accumulated mercury which may have eased a bit but in the North east it was always a problem before. | |
