Volatility of N from UAN or Urea is due to an enzyme(urease) in the soil. Additives that address this concern inhibit the enzyme no the enzyme formation. Urease is plentiful in soils. On the other hand, microbial action is responsible for conversion of NH4 to NO3. So if the AMS is doing anything at all it would be inhibiting the bacteria that mediate the nitrification process.
