In my experience, corn works best the first year. My preference is kill it with shallow tillage and plant an oat/pea/brassica mix in late summer. Graze in late fall, then plant corn the following spring. Could also go to beans the first year out.

Before you jump on the bandwagon, be prepared for prices lower than they've been in recent years. Organic is good money, but it's far from free money.
