Oats. Minimum of 3 bu/acre and get it planted as soon as field is dry enough to drive across. You can use the oats in your young calves ration. Use a grain drill with a small seed box and plant about 8#/acre of the cheapest red clover seed you can find with the oats. You will get a nice cutting of clover hay about Labor day and then plant your winter rye into the clover.
