Yes, that would really add to the flavor. As I said, I learned how to make this simple pot of beans from a friend back in 1967. For a long time, I forgot how good they are - but the whole family looks forward to them whenever we get together - especially the picky younger kid.

BTW, we take them north to BC when we leave in the early summer. We make up several pots and freeze them in a vacuum sealed bag - if you lay them on a flat surface in the freezer, they freeze flat as a pancake, and they stack on top of each other very compactly. These are also great in the fall of the year during harvest, as they keep in the fridge for some time. Or, go to Walmart and pick up an individual wide mouth soup thermos and take it along in the combine or tractor.

Too bad it isn't low carb, but if you are not on a diet where it is essential to be very low carb all of the time, it is great.
