It will be easier if you avoid combination dishes, that's where you'll have more problems with the gluten and dairy.
Any fresh kind of meat will be fine- chicken, pork, beef, hamburger, fish- just don't add bread or flours to it like in making meatballs or putting a breading on it. For sides, potatoes are an option as is rice. All the vegetables except the peppers are fine- just don't add sauces like cheese sauce. All the fruits are fine- just don't put them on ice cream or yogurt. Opt for more plain food than combination or foods with sauces and gravies. For example- Baked Chicken, Baked Potato, Carrots. Fish, wild rice and broccoli. Stir frying is a good way to make a combination dish as is roasting meat and vegetables- like Pot Roast with Potatoes and Carrots.

can't, do all chicken they add "natural flavorings can be added gluten or seasonings like pepper
he is having a problem with pork from our freezer for the last 3 years
fish he is missing a DNA that keeps him from expelling heavy metals like mercury
potatoes are from the "mold" family 3 times a year works holidays
green string beans were ok but not yellow beans
had to find a sauce that does not have any lactose ,whey in it
ice cream and yogurt won't work because of the milk goats milk worked for a while but not in the last 3 years

So It has been a ride the 4 day rotation makes if very hard to travel

For what it's worth he has never had a swallow of pop "soda" in his life
