| I wouldn’t be surprised if the dieticians hands are tied a bit in these situations. Crappy hospital food is an ongoing joke and it will be among the first things a person talks about. A hospital with a healthy but “not appealing to the masses” menu would likely receive a lot of complaints.
I suspect the majority of people don’t want to make very many sacrifices in their diets and instead want to depend on the doctors to fix their issues. I wouldn’t be surprised if it would be a factor in the menu decisions.
