So could it be that some more people have lesser but still significant reactions?
I would say it is likely the exception rather than the rule.
But what if a person is the exception and doesn't know it?

An elimination diet for a month or two could let a person that suspects they have a problem know if they really do. Cheap, easy way for a person to experiment and potentially take charge of ones health issues that have previously not been able to be resolved.
Low risk, potential high rewards. If no change? Nothing lost other than avoiding some foods for a while that a person might like eating. Not much of a sacrifice if it could potentially help debilitating conditions.
