If you want to do UBNT stuff with the minimums, two Nanostations, one US-8-60W switch, 1-3 G3-Bullet, 1 Cloud Key G2+.

More specifically two Nanostation 5ACs. You can use the loco versions but they do not support 802.3af and they do not come with PoE injectors so you will need to buy them. May not be the worst idea at the dryer site because it will free up a PoE port on that switch for running the CK. If its just one camera somewhere you can use the full 5AC and run the camera through the PoE passthrough. 

The G3 Bullets have terrible IR. The G3-Pro's are better but a bit spendy. Can always do an IR floodlight if needed. The G3's are all 802.3af after datecode 1812(12th week 2018). They'll run directly off that switch. 

The CK G2+ runs unifi protect. It will auto find the cameras. It has a mobile app for viewing them. It comes with a 1TB hard drive that you can swap for a 5TB. It will also run Unifi for the switch.

As for LOS, its a dryer and a shop. I assume with some poles you can get LOS or is this a huge building in the middle?
