First of all you need line of sight to each accesspoint. 200ft of eithernet cable is theoretically doable but I have had problems with 100ft runs. Make sure it is cat 6 cable if you are going to try it, it is heavier gauge wire. You could setup a couple access point in the blocking shed connected via cable to pass the signal through the shed. I would steer clear of the ubnt routers they are for an advanced user and I dont think it's going to benefit you much to have one.

As far as cameras go look at nellyssecurity.com they have several choices and very helpful staff. I have bought hikvision cameras from them in the past. Also keep in mind ubnt stuff that is poe runs on a highervoltage than standard Poe components.
