South Central MN | A favorite thing I like to do ahead of fall fieldwork is make and freeze boneless/skinless chicken breasts. I cut them into smaller chicken strip sizes, season with garlic, pepper, and Lawry’s Seasoning salt and sautée in olive oil until done. These can be pulled out of the freezer to throw on a sandwich as is, made into a chicken/pasta salad, or chopped up with onion and mixed with a little miracle whip and mustard for a sandwich spread. All of these can be brought in your lunchbox. Also, how about a meatloaf sandwich? | |
