Soon as an ear is picked the sugar starts withdrawing from the kernel into the cob. This is the main reason store bought sweet corn is not as good as what you pick at home. I use to sell some to a local grocery store. They would want a 100 dozen years early Sat morning. That may last them 3-4 days then would want enough to last them till the next Sat morning when they would want another 100 doz. I was always told if you drop an ear coming from the patch to the house to leave it lay . Otherwise if you take time to pick it up the others will be to old to eat. For our own use we always pick fresh for every meal. Even in the refrigerator it starts losing its flavor right away IMOZ.

Also as mentioned, variety vary in sugar content. Most will average 15-16% sugar but some of the super sweets will have up to 45% sugar content.
