Physics. Water and humidity have lots of thermal mass. Hot days and lots of water mean overnight temps don’t dip as much, and the C4 plant originating from the Mexico City plateau way up in the sky doesn’t like those warmer overnight temps.

Disease is an issue but not as big a factor, IMO, as the overnight temps.
