I’d do a mix.

Soybeans - legume
Wheat or rye - grass cool season
Oats and/or pearl millet - warm grass
Turnip/radish - cool season brassica

You’ll get more tonnage with a mix and longer grazing window.

As for soybeans I’d get whatever was cheap. Left over treated seed. Small seeded rr1 or nongmo beans.
