Subject: Organic Transition?

s.e. Pa
I farm a small piece of ground that was recently sold. New owner is Amish and is planning to farm it once it’s certified organic, but asked if I would farm it during the transition period. It’s in wheat now. Plan would be to harvest, lime, manure heavily, plant alfalfa. Does the seed need to be certified organic? I assume I could not use the manure I have in the coming years, since it’s from a conventional flock/herd? Where can I find more about the requirements? Any advice on this?
