I cut off 1.3 pounds of meat, and have that soaking in a marinade. Marinade consists of lemon juice, soy sauce, and Worcestershire sauce; and is supposed to tenderize the meat. Not sure how I'll cook it yet, but probably in the crock pot. May try frying a little as well.

I gave the rest of the carcass to the dog, and estimate that there was still nearly a pound of meat on the bones. Having never cut meat before, I wasn't very efficient in how much I got.

Next time, I'll probably marinade the meat while it's still on the bone. Could cook it that way too, and just pick it off while eating, same as with a chicken.
