Yes it can be done in excel. With out seeing your sheet, I’m guessing you would have to design some type of look up table. Pivot tables are useful for reporting but depending on how you add products and differentiate things they may not be flexible enough.

The best answer is not excel. Access is a much better choice. It’s has the inherent ability to store data in master tables then query it and report it by customer or any other parameters you need.

New versions of access our much easier to build than the old ones.
